To be cooked in the microwave.
Make in a 1 litre/2.5 pint basin.
Ingredients
100g (4oz) S.R. flour
100g (4oz) caster sugar
25g (1oz) cocoa
pinch of salt
1 egg beaten
4 X 15ml (4 X tbls) milk
15ml (1 tbls) vanilla essence
50g (2oz) margarine
1. Mix together the flour, sugar, salt, cocoa in a bowl.
2. Melt the margarine on medium power for 45 seconds.
3. Add the margarine to the flour mixture and mix in the egg, milk and vanilla.
4. Pour the mixture into a lightly greased basin and level with a spoon.
Topping
100g (4oz) sugar
25g (1oz) cocoa
150ml (1/4 pint) water
5. Mix the sugar and the cocoa together and sprinkle on top of the pudding. Heat the water for 30 seconds on high power and pour on top of the pudding.
6. Cook the pudding on high for 5 to 5 1/2 minutes.
7. Serve immediately with fresh cream, ice cream – really yummy, but high on the calories!
